Superb Cream of Broccoli and Potatoes

Broccoli is a very versatile vegetable, and delicious too! It is perfect for creamy soups, sauteed, roasted, you name it!
What's more, broccoli is a super power veggie, loaded with vitamins A, B1, B2, B3, B6, C, folic acid, iron, magnesium, potassium, and zinc.

We accidentally put together some veggies and came up with this amazing creamy recipe that kids and adults absolutely love. You have to give it a try!

Cream of Broccoli and Potatoes
Servings: 8 portions

-  2 lbs of organic broccoli chunks
- 1  lb organic potatoes, sliced
- 1 cup of grated organic carrots
- 1 medium onion, diced
- 3 garlic cloves, diced
- 1 to 2 tablespoons of cream cheese (depending on taste)
- 2 tablespoons of canola oil
- Salt and freshly ground pepper
- 2 cups of water
- Parmesan cheese to taste
- Whole wheat toasts


Saute diced onion and garlic with the oil until tender in a large pot. Add broccoli, potatoes, carrots and the water, cover and simmer for 20 minutes, or until potatoes are cooked. Add cream cheese.
Using a hand blender, blend all contents together. Add more water or milk, depending on desired consistency. Add salt and pepper to taste.
Serve it with grated parmesan cheese on top, and a slice of toast.
