In Italy, a panino is customarily made from a small roll or loaf of bread, typically a ciabatta or a rosetta. The loaf is cut horizontally and filled with salami, ham, cheese, mortadella or other food. It is usually served hot after having been pressed in a grill.
Yummm, we love Panini! We came up with a green version perfect for snacks or light dinner. Loaded with calcium and vitamins, we leave the meat aside for our delicious version, using leafy greens instead! (Note for non Italian speakers: Panino means "small bread roll", its plural form is Panini).
Leafy Green Panini
Servings: 2 panini
- 1/2 lb. chopped kale or collards
- 2 garlic cloves, minced
- 1 oz goat cheese
- 1 once of fresh mozzarella, sliced
- 4 slices of whole grain Ciabatta bread
- Olive oil
- Salt
Cook the minced garlic in 1 or 2 table spoons of olive oil. Add the chopped greens and stir. Add a small glass of water and a bit of salt to taste. Let it cook for 4 minutes.
Preheat the panini grill. Brush both side of the grill with a very thin layer of olive oil.
Open the ciabatta, and spread 2 slices of mozzarella and goat cheese. On top of the cheese, pile the greens, and another slice of mozzarella. Cover it with the other half of the ciabatta.
Place in the panini maker, and grill for three to five minutes until the cheese has melted and the bread is toasty.
Tip: Add grilled chicken breast and a little bit of Dijon mustard in the panini if serving for dinner. They will make them richer!
