Chocolate Salami

This recipe has a tremendous presentation: fun, creative and delicious. Kids will love making and eating chocolate salami. This is a traditional dessert/snack served in Portugal and Brazil.

Chocolate Salami
Servings: 20 portions

12 ounces (30 grams) dark chocolate (70%, in pieces
1/4 cup unsalted butter
2 Tbsp rolled oat flakes
1 cup crushed vanilla whole wheat cookies
1/2 cup (125 ml) finely chopped Brazil nuts or almonds
3 ounces (85 grams) white baking chocolate, chopped

In a double boiler, melt the dark chocolate and butter together over medium heat. Remove from heat once melted and let cool. Stir in the oats, the crumbled cookies and the nuts. Finally, stir in the white chocolate.

Spread the mixture out on a large piece of wax paper. Shape the mass into a roll about 12 inches (30 cm) long, using the wax paper to help form a sausage-shaped piece. Once the roll is formed inside the wax paper, fold the ends of the wax paper tightly, and place the roll in the refrigerator for at least 3 hours to chill thoroughly.

When ready to serve, remove from the refrigerator, unwrap the roll and slice into thick slices. Let rest for approximately 15 minutes to warm slightly, then serve.

Sarah Leah Chase's Scalloped Tomatoes

Hi everyone!  And happy Labor Day!

We're back and had a wonderful time. Once I get my photos organized, I'll do a post on our Nevis vacation. (I still have one more island post to go on our French Polynesian adventure of several years ago. That'll come first.) I'm looking forward to visiting all of you and find out what you've been doing.
My daughter and I made a reading list for you. Click here to see what we read and loved this summer.

Sarah's Cold-Weather Cooking is one of my favorite cookbooks. I've mentioned it several times and cook from it frequently. It was published in 1990 and this recipe for Scalloped Tomatoes was included in it. Ina Garten made it on her TV show a couple years ago and mentioned the recipe was from her friend Sarah Chase. My ears perked up....Ina has mentioned Sarah before and always generously gives her full credit.  She adapted Sarah's recipe slightly, so I double checked the original in Sarah's cookbook. I made a mental note to give it a try, but never got around to it. Last year, Deb from Smitten Kitchen posted Ina's version and gave it a thumbs up. So it sure has made the rounds.

I know it says "cold weather" in the cookbook title, but this recipe sure seems loaded with summer flavors to me  (garden tomatoes and fresh basil!) so I finally got around to making it.  And shame on me, I made Sarah's original recipe with bacon grease. How could I not?? You can find Ina's recipe HERE. What a super side dish to serve with something on the grill. Actually, I was nibbling on it for a couple days after as well. All those lovely Parmesan and bacon-encrusted croutons!

Scalloped Tomatoes

From Cold-Weather Cooking by Sarah Leah Chase

Ingredients:
3 tablespoons bacon fat
2 cups (1/2-inch diced) French bread
16 plum tomatoes, cut 1/2-inch dice (about 2 1/2 pounds)
1 tablespoon minced garlic (3 cloves)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup julienned basil leaves, lightly packed
1 cup freshly grated Parmesan cheese

Method:
Preheat the oven to 350 degrees F.

Heat the bacon fat in a large (12 inch) saute pan over medium heat. Add the bread cubes and stir to coat with the oil. Cook over medium to medium-high heat for 5 minutes, stirring often, until the cubes are evenly browned.
Add the tomatoes, garlic and sugar to then pan and continue to cook, stirring often, for 5 minutes. Season with salt and pepper, add the basil and remove from the heat.

Pour the tomato mixture into a shallow (6 to 8 cup) baking dish. Sprinkle evenly with the Parmesan cheese and drizzle with 2 tablespoons of olive oil. Bake for 35 to 40 minutes until the top is browned and the tomatoes are bubbly. Serve hot or warm.

The Crossroads

We are at that place in the road. Club Dancer is definitely lagging behind the other blogs in our blogosphere.
Blogger's Law No. 51C: There is no time like the present
for postponing what you don't want to do."

Now that I live in Nanakuli, I just do not have enough time to visit, take the photos and make the write up. The main studios, (and related interests) have been Al Franz Studio, Dream to Dance Studio and Arthur Murray Studios. Since Town Dance has been more into the International Style of dance, I thought to give Club Dancer their opportunity in the American Style.

They send out routine flyer information but they will not contribute information direct to our readers. No information write ups and of course I have never received a photo for publication. So since I cannot do everything for them, and they cannot do anything for themselves, the time may have come.

"Cracklin' Rose" by Neil Diamond

The hits are coming down towards 34 average per day, which is equvalent to 1000 per month. Anything below that is not worth it for me, because I cannot handle the whole enchilada. For it to be social media it must have social information contributors.

Platinum Horseshoe blog is getting 67 average hits per day, which is 2000 hits per month. We are way out in the sticks, but the information contributors are giving us the information, which is what makes social media.

As soon as we get one Contributing Editor, it will be flying and perhaps overtake Town Dancer, (which is not likely.)

It has been a nice run, I will be going to Arthur Murray party on Friday the 16th and make one last attempt for a nice blog. The month of September should tell us the story. "They coulda been a contendah."

Pub's Note: For a very good example of Social Media, tune in to Frank's blogs, "That's Dancing" and The Dance Connection" both on the side bar. Just click and you got it.

Viral Fever Symptoms

Viral Fever Symptoms and Treatment

Viral fevers are seen all over the world, and viral fever symptoms can affect all age groups from the smallest infant to the elderly. A small number of viral fever cases are deadly, but most of the time viral fever is not serious and it will go away on its own or with home care and over-the-counter treatment of the worst symptoms. Viral fevers can be highly contagious, however, so they have a tendency to spread very quickly.

In general, a viral fever is an infection in the body that is caused by a virus. This type of infection leads to a spike in body temperature once it has manifested itself in the body. Viral fever is unique in that it is most often treated and overcome without the true virus that caused the problem ever being determined.

Symptoms of Viral Fever

Treatment of viral fevers is usually symptomatic, or based on the various and separate viral fever symptoms. The most obvious viral fever symptom is the fever, of course, and it can be a low-grade fever (99 to 100 degrees) or a very high fever (102 degrees or more). Sometimes the fever will even come and go. Other viral fever symptoms include the following:

> coughing

> eye redness or irritation

> headache

> muscle aches, joint pain and general body ache

> nasal congestion

> runny nose

> severe and ongoing fatigue

> sore throat and swollen glands

Mom of the Week: Kim Hanou

Meet Kim Hanou, a creative mom from Colorado. Kim, a former elementary school teacher, runs a very fun and entertaining blog, Too Much Time On My Hands, and an Etsy store.
She has 2 adorable kids under the age of 4.

Best advice to make your kids eat healthy / What is in their lunchbox?
I could not live without DIP! Dip has saved my life. Hummus, yogurt, applesauce, roasted red pepper and black bean dip. If my kids have dip, I can get them to eat almost anything! We also had a blast with our garden this summer. They are excited to help with the process and get really dirty and wet! Then when the veggies are ripe they will try everything, because they are the ones who grew it. They LOVE helping make homemade pizza with the tomatoes, basil, oregano, and peppers from the garden. They are so proud of their individual pizza creations and we have contests to see who's is the most colorful.

Kid gear you couldn't have lived without
My Ergo Baby carrier was the best when my kids were small. I tried 4 different carriers and they all broke my back. But I can actually still use it comfortably and they weigh 40 lbs! Although it isn't really "gear," I could not live without reusable snack bags. They are good for everything and I don't feel guilty using 4 ofr a trip to the pool like I did when I was using zip-loc baggies. I am learning  how to sew so I can make my own.

Mantra to keep calm in chaotic moments
My 2 1/2 year old has been giving me many stressful moments lately. I find myself saying, "He is only two, I know this will get easier." After living through the terrible two's once bfeore, I know it really does get easier!

Tricks to keep in shape
I am not naturally a big fruit and veggie person, but since having kids I have gotten so much better. I follow their lead and now eat all the healthy stuff I put out for them. They have motivated me to take better care of myself and get off my but and enjoy more time outside!

Best busy mom beauty trick
HATS! There are too many days, when I do not have time to tackle the daunting task of "doing" my hair. So I have invested in a bunch of really cute hats. They are dressier than baseball caps, but just as easy!

One green guilt
This summer my big green guilt has been sunscreen. I know it is terrible, but man that no-rub spray sunscreen is so easy when trying to get a  running 2 year old some protection from the sun. Up till know I have always used the Alba sunscreen, but we were just on a 2 week 3,000 mile road trip where we spent every day in teh sun. I went through 5 bottles of sunscreen and it was so easy, I do feel guilty though!

Great News For Potato Lovers

A new study found that daily consumption of purple potatoes can help lower blood pressure, without causing weight gain. In the study, 18 overweight or obese, hypertensive subjects who either ate six to eight small purple potatoes, with skins, at both lunch and dinner (for a daily total of 218 calories), or had no potatoes as part of their diet for four weeks. Then the participants crossed over to the other regimen.

On average, diastolic blood pressure dropped by 4.3 percent and systolic blood pressure dropped by 3.5 percent.
Purple potatoes boast higher levels of polyphenol antioxidants that protect body cells against free radical damage that can increase disease risk. To preserve these powerful plant chemicals, subjects in the study were asked to microwave their potatoes instead of using other cooking methods.
